Dinner 2/24

This is my lunchbox. The large container holds spicy peanut noodles I made for an Oscar party last night that weren't very good. They weren't salty of spicy enough, I made them with soba noodles figuring I could use the extra protein. Soba noodles cook fast, fyi. The Cucumber and cilantro is garnich. The 3rd bowl holds califlower risotto with a breadcrumb topping that JP made which was good but a little low on taste, it cold have used some mushroom broth or fresh oregano.

Dinner 2/23

Kurt wanted potatoes. We have a lot of fresh thyme so I tossed red and purple potatoes with olive oil, salt, garlic and thyme and roasted it for about 20 minutes. Also I roasted some sweet potatoes but with just salt, pepper, sugar and oil. Asparagus was cheap at the store but Kurt made me feel bad about buying it because it wasn't local. I am trying to be green, I swear, but I love asparagus, plus I thought a nice crisp vegetable would compliment the potatoes.

Dinner 2-20

Well, truffles are vegetarian. In the spirit of Mardi Gras I binged on sweets for dinner and am fasting for the next 40 days (I will be eating some small meals which I will post). There is nothing more decadent than a box of high-quality truffles in bed while watching Boston Legal.

Dinner 2-16

This salad was mostly stuff from the farmers market however for a little protein I have put sunflower seeds and an egg white (hardboiled) onto the salad. It was almost too large to eat in a sitting. I don't do a thorough job of cutting up the lettuce, which leads to me stuffing huge pieces of lettuce into my mouth while the dressing (olive oil, pepper and lemon juice here) drips about. But luckily I ate this while alone.

Breakfast 2-19

Good old fashioned oatmeal without milk and with a generous sprinkling of cinnamon.

Dinner 2-15

This is a vegetarian variation on one of my favorite dishes from childhood; Sausage and broccoli rabe. Unfortunately soy sausage just doesn't do it. I am thinking of using chunks of steamed potato in place of faux-sausage.

Breakfast 2-18

This is a breakfast made of whole wheat bread, cheese and peppers and onions with an egg baked on top of it. It resembles a nest. It needed salt or more cheese.

Dinner 2-14

This is vegetable-fried rice I made for dinner. It is important to use cold rice or the rice will become gluey.
